I love fruit, specially in summer time where you can have every kind of it. Watermelons, strawberries, raspberries, peaches…yummy, yummy!
Eating mango was more or less a recent discovery- have you ever tasted sliced mango pumped up with fresh black pepper and lime juice? Try it out 🙂
Today I kept it simple, thin mango slices and on the top, homemade buckwheat granola…

My adapted version of buckwheat granola consists of:
For a small/ medium cereal dispenser:
- Around 2 cups of soaked buckwheat grains (let them dry for a bit after overnight soaking)
- Chopped almonds and walnuts
- Goji berries
- Sliced dates
- TS of coconut oil
- A pinch of cacao powder
You just have to mix it well (first combine dried + wet ingredients). Heat your oven (120º) and let it cook for around 15-20 min.
Now, you wonder what to do with more buckwheat that you had soaked and did not use?
Chocolate vanilla pudding! 😉
Combine your buckwheat, some pitted dates (depends how sweet you like it), milk ( I used non-dairy milk: oat&almond milk), a pinch of bourbon vanilla and… mix it well! Keep it in the fridge.

Dos recetas bien sencillas en uno: trigo sarraceno/ alforfón en granola y en pudding de chocolate. Para chuparse los dedos, oiga :-).
El trigo sarraceno es un pseudocereal y no tiene gluten, lo que le convierte en un atractivo y versátil ingrediente para ciertas dietas. Lo único con lo que debe contar es el remojo en agua fría de estos granos crudos (yo los dejo toda la noche) y al día siguiente, podemos proceder a elaborar las recetas.
La granola es sencillísima de hacer y perfecta para meriendas y desayunos, mis cantidades son (para un bote pequeño/ mediano de cristal):
- 2 tazas de trigo sarraceno (escurrido y seco)
- nueces, almendras…lo que tengáis a mano que pueda ir bien:-)
- bayas de Goji
- dátiles
- una cucharadita de aceite de coco
- una cucharadita de cacao en polvo
Mezclamos los ingredientes y los llevamos al horno en la bandeja (sobre un papel de horno). Lo dejamos unos 15-20 a 120 grados, removiendo y controlando que no se queme.
La segunda receta que os propongo es un pudding de chocolate y vainilla. Tan sencillo como mezclar: dátiles, chocolate en polvo, leche (de vaca o como en mi caso, de almendras y de avena), un trocito de vaina de vainilla (bourbon) y el trigo sarraceno escurrido. Lo batimos bien y al frigo.
